Power Boost Hot Chocolate

Energy Boost Hot ChocolateGrowing up hot chocolate was a favorite of mine. I have fond memories of waking up early in the morning with my dad to have a cup of hot chocolate and usually listen to some rock classics together.

Cilantro Lime Riced Cauliflower Recipe

Cauliflower is an amazing versatile vegetable.  It is great raw, tossed in salads, stir-fries, soups, roasted and steamed.

But even with all those wonderful preparation options one may still get in a rut with how to spruce this vegetable up. 

That’s why I’m going to share with you my riced cauliflower recipe that you’ll only have to make once, but can be utilized in several different meals throughout the week.

Two weeks ago I was on vacation in beautiful Colorado.  It was my first time to the state.

My Favorite Gluten Free Blueberry Pancakes


I’m going gluten free, again.

It’s been about 5 years since I’ve removed 90% of gluten from my diet. I don’t keep gluten in the house so the 10% equates to times of dining out or traveling.  During the last 5 years I have went completely gluten free for stretches of 6 months at a time.

And you know what? I feel better each time I do. I think more clearly, my body has less aches and pains, I have more energy, I don’t have the need to nap, which in return allows me to get more done. Read more

Memorial weekend is here and with that kicks off my favorite season of the year, summer.  I know it’s not technically summer till June 21st, but in my head it’s summer time!
